Cedar Plank Artichokes

   4 medium to large fresh artichokes
   1/3 cup Olive Oil
   Salt & Pepper
   3/4 Tbs Rosemary
   1/2 Tbs Thyme
   3 cloves garlic
   Lemons or lemon juice

 1. Soak plank for at least 1 hour in water
 2. Soak whole artichokes for 20 minutes in cold water with 1/2 lemon squeezed in water.
 3. After soaking, cut tops and trim artichokes if desired.
 4. Add 1 tbs of salt to water and bring to a boil.
 5. Boil artichokes in salted water for 15 minutes.
 6. While the artichokes are boiling, peel and dice the garlic and mix with the olive oil, rosemary, thyme, 1 tbs lemon juice, 1/2 tsp salt and 1/4 tsp pepper.
 7. After the Artichokes have boiled, allow to cool for 5-10 minutes or until you are able to handle them safely.
 8. While artichokes are cooling, preheat barbecue to medium heat - around 350 F
 9. When artichokes are cool, cut in half.
10. Brush the mixture onto the insides of the artichokes.
11. When plank is soaked and grill is ready, wipe excess water from plank.
12. Rub a teaspoon of Olive oil on plank.
13. Place artichokes inside down on plank.
14. Place the plank on the center of grill and close lid. Keep the lid closed as much as possible to allow for faster cooking of the food.
15. Cook on plank for 15-20 minutes. Pull a leaf to test doneness. Caution: use a fork or tongs to remove the leaf, it will be HOT!
16. Place on serving platter or leave on plank.
17. Careful, be sure to use a spatula, the plank will be HOT!

These are some of the best artichokes I have ever eaten, tied with grilling them. Stay tuned, I will be listing a great sauce for dipping the artichokes in shortly. In the meantime, use mayo or a good dressing.
